CRBW 420 - Hop Science


Description:
This course introduces the ecology, processing, and commercial use of hops within the brewing industry.  Students will learn though a hands-on sensory approach and with opportunities to work closely with the hop industry.

Prerequisites:
Prerequisite: admittance to the Craft Brewing Program or permission from the department. Students must be 21 years of age or older.

Learner Outcomes:
Upon successful completion of this course, the student will be able to:

  • Evaluate and distinguish among factors including agricultural practices, disease and pest management, and post harvest processing that influence the quality, quantity, and properties of hops in the commercial market. 
  • Recognize hop products and what contributes to changes in hop aroma character.  Examine differences between Aroma vs Alpha vs Dual Purpose hop.
  • Formulate a plan for choosing, contracting, and sourcing hops for a commercial brewery.
  • Assess the factors that influence the hop industry and the hop industry’s relationships with businesses that depend on hops/hop products.
