PUBH 318 - The Politics of Food and Health Description: Exploration of the politics of food from farm to table, and the implications for human and environmental health. PUBH 318 and NUTR 318 are cross-listed courses; students may not receive credit for both. Course will be offered every year. Course will not have an established scheduling pattern.

Learner Outcomes: Upon successful completion of this course, the student will be able to:
- Analyze changes in U.S. diet over time.
- Question food systems, choices, and discourse relative to personal and population health.
- Identify influential factors in the food environment relative to power.
- Evaluate regulatory influence on food production, manufacturing, and distribution and the potential effects on human and environmental health.
- Frame a food system issue, from a population health standpoint, for discussion.
